Banquet halls in Ontario and the Prairies often book peak summer Saturdays more than a year out. Per-person packages, hall rental and the admin fee
Canadian banquet halls usually quote per person: a dinner package, a bar package, a late-night snack, and linens or chair covers, with hall rental either included above a minimum guest count or charged separately below it. Many add a service or administration charge as a percentage of food and beverage.
The quote should show every one of those lines clearly, including the percentage charge and the tax on it, because the question couples ask most often after the event is why the final total was higher than the per-person price they remembered.

GST, HST and QST on hall rental and deposits
Sales tax on a banquet booking depends on the province where the event takes place. Ontario charges 13% HST; Nova Scotia charges 14% HST since 1 April 2025; New Brunswick, Newfoundland and Labrador and Prince Edward Island charge 15% HST; Alberta, British Columbia, Manitoba, Saskatchewan, Quebec and the territories charge 5% GST, with Quebec adding QST and some provinces their own sales taxes. The tax applies to the hall rental, food, bar and charges added to the bill, so the quote should apply the right rate to each line.
Deposits have their own rule. Under subsection 168(9) of the Excise Tax Act, a deposit, refundable or not, is not treated as payment for the supply until the venue applies it as payment. In practice, many halls apply the confirming deposit to the booking straight away and account for GST or HST on it then; a damage deposit returned after the event never becomes payment. Recording which is which on the booking keeps the GST/HST return straightforward.
