The orders a Nigerian caterer juggles in one weekend
A single weekend can hold an owambe for 500 with jollof rice, fried rice, small chops and food packs for guests to take home, a corporate lunch of packed meals, and a birthday that wants a live suya station. Each order has its own menu, its own headcount and its own payment plan.
Headcount is the hardest number. Families often plan for one figure and feed another. Agree in writing how extra plates will be charged, and record the agreed overflow on the order, so the conversation at the end of the night is about a line on the invoice rather than a memory.
Corporate orders are calmer but stricter. They want a quotation on letterhead, a purchase order before cooking, and an invoice with the right company name afterwards.

Costing when food prices move every month
Rice, oil, tomatoes, peppers and protein can all change price between the day you quote and the day you go to market. A quote that was profitable in January can be thin by March.
Three habits help. Give every quote a validity period. Price per head and per pack, so a change in numbers changes the total automatically. And take a first payment large enough to buy the main foodstuff before the event week.

Health rules, NAFDAC and the tax side
In Lagos, the Ministry of Health expects food handlers to undergo medical screening twice a year and food premises to be registered. Other states have their own environmental health requirements, so check with your state ministry or local government before you scale up.
NAFDAC registration is aimed at packaged food sold to the public. A caterer cooking for an event usually does not register each dish, but if you start selling packaged products such as bottled zobo or packaged chin chin, read NAFDAC's guidance for small businesses first.
VAT is 7.5 percent for caterers above the small business threshold, charged under the Nigeria Tax Act 2025 and collected by the Nigeria Revenue Service. Lagos also has a 5 percent consumption tax on restaurants and event centres. Whether it applies to an outside caterer depends on how your business is classified, so ask LIRS or your adviser rather than guessing.

Cooks, servers and the event-day sheet
The sheet that leaves your kitchen should show the menu, the quantity of each pot, the number of food packs, the service style, the hall address, the time the food must be ready and the names of the servers going.
When the family changes the menu on Wednesday, the sheet must change too. If the sheet is printed from the order, it does. If it is retyped from a WhatsApp message, someone will cook the old menu.
After the event, record what came back: coolers, chafing dishes and serving trays. Equipment that never returns is a quiet cost for many caterers.
Corporate orders, packed meals and staff canteens
Corporate work is steadier than owambe weekends. Banks, oil service firms and agencies order packed lunches for trainings, small chops for launches and daily meals for staff, and they pay by invoice.
